Finally I have an option for bread dough that doesn't require my oven. Yes, boiling water in a pan at the bottom of the oven is the ideal, but when you only have one oven and you need to juggle more than one thing, that's a problem. This is a decent backup plan. The dough at the very bottom of the stainless bowl did get crusty on me, as though it had begun baking, but that was only the bottom 1/8". The rest of the bowl rose perfectly, and the dough ball measured at about 95F after an hour of proofing. Nor did the minor crusting make any noticeable difference once the dough was rolled, formed, and baked.
