If you're like me and happen to come across this product, the first thing you'll say is "a cup of honey - for seventy bucks?". Yes indeed, and there are three factors that drive up this cost: First, Manuka honey is made from bees that pollinate the Manuka bush (aka tea tree) in New Zealand. Second, there is a compound called MGO which has antibacterial properties - the higher the better. And third, there is also a marker called UMF (Unique Manuka Factor, I'm not making this up) which indicates the potency. You can get Manuka honey from this very same company for one- forth the price if you're willing to accept lower MGO and UMF numbers. But unsurprisingly, only higher- grade Manuka honey is said to have healing properties. As for taste, this for me is the best part. It's unmistakably honey, but it tastes more flowery than most, and it also has a great texture and viscosity which is between hard (crystallized) and annoyingly liquid cheap honey. I will, at his price, continue to schmier my toast with Trader Joe's Raw Honey, but for an occasional treat maybe with Greek yoghurt, this is exquisite honey.
