While unpacking this beautiful little cookware set, I acquired a new respect for things made in China. This cookware remains non-stick for a handful of times without using oil. After that, a light oil is needed. The slick strong surface makes cleanup quicker and easier than with most other cookware. Also, the rapid heat conductivity of these sturdy Gotham pots and pans is amazing, so it's definitely a good buy. UPDATE: Recently I was boiling some water in the square pan, when the phone rang. I got into a conversation and forgot I had the burner on high. The water had boiled out, and the empty pan had remained on high heat for nearly an hour! I removed the pan from the stovetop and allowed it to cool. Amazingly the bottom was undamaged. In fact, it looked shiny and brand new! I don't know what kind of miracle metal Gotham uses, but a normal pan would have been destroyed. (I later noticed the bottom of the square pan has a reinforced metal plate unlike the other pan & pot.
