The first thing I did on receiving this pan was wash it and then put it directly on the stove to use in making chapatis. Not very challenging but It worked well. I'd already bought the 9.5 inch chef's pan, a bit deeper with a narrower bottom. I'd tested some very sticky foods- dumplings, mashed potatoes and various batters of thick or thin consistency, that stick to other "non-stick" pans. I didn't add oil to either batters or potatoes and both foods released easily. Cleanup wasn't more complicated than wiping out the pan. I've used it for stir-fries with excellent results. The pans holds heat well and performs as advertised. It's too soon to know how it will wear but I think it should do just fine. I made a point to use silverware and metal utensils in both pans, doing some deliberate and forceful scrapes with a metal spatula and I saw no evidence that the finish had been in any way affected or damaged. Not as advertised - most things stick and the pans have discolored. When we contacted the company to inquire if there was a defect this was there response - not very professional. Please see the attached pamphlets that explain the Hybrid cookware Black Cube. This is not a NON-stick Cookware this is a stainless steel induction ready cookware with added non stick grids for the ease of clean up. This cookware should be used with butter or oil and heats up very quickly therefore does not need high temps. The pans are made to be scrubbed like a stainless steel and are very durable and can even tolerate metal utensils. We do not off trial periods and we do not refund for buyer’s remorse. We only take back item that are in New/unused condition. The pan is covered for lifetime limited warranty for manufactures defects in which we will gladly replace. Read more

Updated review 11-29-17: The newest version of this pan has given me reason to re-write my entire review and I can now highly recommend it! The reason I was interested in this pan is because I wanted an every-day non-stick frying pan that could go into the dishwasher, and one that didn't have any harmful chemicals in the non-stick coating. That is very difficult to find! I initially tried this pan a few years ago and although I was happy with its performance, the non-stick coating would separate from the pan after a short time. Frieling actually listened to my issues and worked with me to replace the pan, and they recently sent me the newest version to try. It appears they have completely resolved the issue of the coating separating from the pan. As for performance, I am really pleased with the pan - it fries up burgers, fried eggs, sauteed veggies, etc., and then goes straight into the dishwasher. I believe you can use metal utensils in the pan because of the stainless steel being raised up higher than the non-stick coating; however, I still use only silicone in the pan to keep it in its best condition. The non-stick performance is excellent; however, don't expect it to work like a traditional non-stick pan. Because of the stainless steel, you need to make sure you have at least a light coating of oil or fat in the pan for your food not to stick. If you will be disappointed because you can't put an egg in a dry pan and have it slide out, then this isn't the pan for you. But I haven't had any issues with food sticking as long as I use oil or fat, and it is certainly much better than an all stainless pan. The folks are Frieling couldn't be any nicer or more helpful; they genuinely care about their customers' happiness, which seems rare these days, and they definitely stand behind their warranty! I attached some photos of some beautiful fried eggs, and some smashed potatoes - microwave baby potatoes until tender; smash and fry in your pan with ghee (or your fat of choice), add sea salt and fry until crispy on outside - so yummy!
